- 8 New Brunswick small potatoes with firm flesh, unpeeled
- 1 small jar of salsa
- Cold cuts of your choice
- Parmesan Cheese
- Basil, thyme or rosemary
- Olive oil
- Pepper
Wash unpeeled potatoes and soak in a pan of cold salted water. Bring to a boil and let simmer 15 minutes. Check potatoes with the tip of a knife. Drain, pass under cold water. Peel and cut potatoes in half lengthwise. Place on a baking pan and put in oven under broil for a minute. Remove from oven, let potatoes cool and cover with a teaspoon of salsa and a slice of cold cut. Sprinkle with a trickle of olive oil and pepper. Add a little chopped basil, thyme or rosemary and parmesan cheese. Makes 4 portions.
