- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cumin
- 1/4 teaspoon of pepper
- 1/4 teaspoon of oregano
- 1/4 teaspoon of salt
- 2 teaspoons of olive oil
- 4 medium New Brunswick potatoes, cut into cubes 2.5 cm (1 inch)
Cut potatoes into 1” cubes and coat evenly with olive oil. Preheat oven to 425ºF. Line a baking sheet with aluminum foil and coat with a vegetable oil spray. Insert sheet into the hot oven. In a large bowl, combine the dry ingredients and mix well. Add the potato cubes to the dry mixture and stir gently to coat evenly. Place the potatoes in a single layer on the hot baking sheet. Turn occasionally until they are golden brown, cook for 20 – 25 minutes. Makes 4 portions.
