- 4 New Brunswick potatoes
- Butter
- 1 onion sliced or chopped
- 3 cloves of garlic crushed
- 1 tsp yellow mustard seeds
- 2 tsp of garam masala (garam masala is a Indian blend of spices you can find in stores)
- 1 tsp of ground coriander
- 1 tsp of ground cumin
- 1/2 tsp of chilli
- 1/4 tsp ground turmeric
- 3 tomatoes chopped
Cut potatoes in cubes. Boil the potatoes until tender. Heat the butter in a deep pan and cook the onion and garlic until onion is translucid and soft. Stir in spices and seeds make sure they blend and add the tomatoes and cook for 2 minutes or until sauce begins to thicken. Add the potatoes and continue cooking until they are heated through and coated with the sauce. 4 portions.
